Most people repeat "over 200 mph" and leave it there. The real record is more specific, more recent, and more interesting than that. It is also a good workout for km/h and mph, because almost every number here gets reported in whichever unit the source happens to use.

Why the race record is lower than the outright one

Qualifying setups chase one number over one lap. They run low downforce, tune everything for a straight line, and never have to survive 60 or more laps of racing. Race setups have to actually finish the race, so teams carry more downforce for cornering and tyre life. That costs top speed, and it explains the whole gap between 378 and 372.5.

Altitude does the rest of the work. The Mexican Grand Prix's 372.5 km/h race record was set at the Autodromo Hermanos Rodríguez, which sits over 2,200 metres above sea level. Thin air means less aerodynamic drag, so a car with an identical setup simply goes faster there than it would at sea level. Acceleration: the part top-speed numbers do not capture

F1 does not publish an official 0-60 figure, because teams do not optimize for a drag-strip sprint. Traction, tyres, and aero balance are all tuned for lap time instead. Independent timing consistently puts modern cars at around 2.5 to 2.6 seconds to 100 km/h. That comes from a 1.6-litre V6 turbo hybrid producing roughly 1,000 hp in a car weighing under 800 kg. That power-to-weight ratio is most of why the acceleration figure sits closer to top-fuel drag racing than to any road car, even though the top speed is not outrageous by comparison.
